SECOND RELEASE
Flavour Profile.
Our second release is a marriage of nine bourbon casks, distilled and filled between 2014 and 2016. Each cask was selected for the role it plays in the final whisky: lifted orchard fruit, clean citrus structure, a creamy mid-palate and gentle baking spice.
There is no sherry cask seasoning here — this release is a pure, bourbon-cask expression of place, captured in spring.
- Nose
Fresh green apple, orchard blossom, cool cucumber skin, hints of melon and soft vanilla.
- Palate
Energetic and vibrant. Buttery mouthfeel. Green citrus oils. Fresh herbs — thyme, perhaps wild sorrel. Opens to white pepper spice, savoury green pea, gentle oak.
- Finish
Fresh, slightly savoury. Lingering green fruit and soft spice.

How does the ballot work?
A ballot is the simplest, fairest way to release a whisky in short supply. Rather than first-come-first-served, which rewards internet speed and quick fingers, we draw names at random when the ballot closes, so everyone has an equal chance.

- 03We securely store your card via Stripe with a £0 hold, you're only charged if you're drawn as a winner.

Our Process.
Whisky at Rosemaund Farm Distillery begins in the soil and is shaped by people, place, and purpose.
01 / Field
It Begins in the Fields.
We grow heritage Maris Otter barley, prized for depth and character, kinder to the soil and richer in flavour. Once brewed, it forms the foundation of our spirit.
02 / Still
The Copper Heart.
The beer meets Fat Betty, our handcrafted copper still, where every run is guided by hand, yielding a bold yet elegant new make spirit.
03 / Cask
Time and Orchard Air.
The spirit matures in oak casks within our old farm warehouses, surrounded by Herefordshire's apple orchards. For The Orchard Cut, we selected nine fully matured bourbon casks for their lifted, orchard-led character.
04 / Bottle
Finished by Hand.
Cut with mineral-rich water from our farm, each bottle is filled, labelled, and sealed on site. Every drop carries the land, craft, and patience of Rosemaund.

FAQs.
Why are you selling by ballot?
Our whisky is released in minimal quantities. To keep the process fair, we use a ballot system rather than "first-come, first-served." This ensures everyone has an equal chance to secure a bottle, regardless of internet speed or time of day.
When am I charged?
Only if your name is drawn. Until then, we hold £0 on your card. If you're not drawn, your card details are securely deleted.
I entered Release 1 but didn't win — am I in this one?
Yes. As we promised last autumn, every Release 1 entrant who wasn't drawn has been entered into this ballot automatically, with your entry counting twice in the draw.
Where do you deliver?
For this release, we are only able to deliver to UK addresses. We're working on EU and US — sign up to the newsletter to be the first to know.
Can I buy more than one bottle?
No. To give as many people as possible a fair chance, the ballot is limited to one entry per person.
Why can't I buy a bottle directly?
Our whisky is being released in small quantities, and demand exceeds supply. The ballot ensures that everyone who wants a bottle has an equal chance, without encouraging a scramble or queue system.
How often will you release whisky?
We expect to hold two ballots in 2026, releasing around 5,000 bottles of 10-year-old Rosemaund Farm Whisky in total.
Is the draw really random?
Yes. We use a verifiable random algorithm to draw names. The draw seed and entry list (anonymised) can be published afterwards on request.
What if I made a mistake on my entry?
You can cancel and re-enter at any time before 6pm on 29th May. This won't affect your chances of winning.
